Jacketed Potatoes

This is a great way to make those delicious, foil wrapped potatoes cooked on the barbecue coals or in a campfire even better.

Before wrapping, rub the potato with olive oil. Add one slice of lemon, one clove of garlic, and half a shallot. Sprinkle with salt and pepper, then wrap it up as normal. The steam from the lemon will help cook the potato, and the garlic, lemon, and shallot will give it a nice flavor.
