CRANBERRY-ORANGE RELISH FOR TURKEYS

This recipe is mine!

INGREDIENTS

2 packages fresh cranberries (12 oz each)

2 oranges, unpeeled, cut into 8 pieces each

1 cup of pecans (walnuts or almonds may be substituted)

1 cup of honey

1 large chunk of fresh ginger, grated

2 packages of raspberries (8 oz each)

Place the cranberries in a food processor and pulse until coarsely chopped (around 15 pulses). Remove from processor to a large bowl

Place oranges and nuts in the food processor and pulse until coarsley chopped (around 15 pulses).  Remove from processor to a large bowl.

Mix ginger with honey, pour over fruit, and mix thoroughly.

Mix in raspberries (it’s OK to break a few of them while mixing).

Allow to macerate for up to three days.

(NOTE:  having made this now, I am convinced that it would also make a fantastic turkey stuffing.)
